Week 7. How are we doing? Enjoying small things like gorgeous weather over the weekend and the sense that things are their way to getting better.

-I kind of love barbecue sauce. This makeshift BBQ chicken salad made a lunch appearance a few times last week. Shredded chicken, bbq sauce, a little dijon mustard, chopped celery, carrots, relish, salt and pepper!
-Got to help deliver meals to healthcare workers with work last week. Our cases are down in Oklahoma but our nurses and doctors are still overwhelmed and they mentioned the food helped lift their spirits!
-Mojito o’clock!
-This last week should have been the Oklahoma City Art’s Festival. Due to Covid-19 it was canceled, but an Indian Taco at home made it feel like I was there.
-Sweet and salty toast is the easiest go-to breakfast or lunch.
-Coffee walks have been a new part of my morning routine a few days a week. Coffee mug yeti, favorite leggings and sneaks are also included.
-This easy cocktail that is on repeat: grapefruit juice, tequila, a splash of lemon juice, rosemary and filled to the top with sparkling water.
-Did you catch my Flow + Glow with my friend and yoga instructor Addie yesterday? We did a 30 minute guided flow followed by a demo of My Perfect Green Smoothie!
-Sunday bike ride with mom!

Fun fact, this is my 300th “bites of my life” post. 3-0-0 woah!

I had a great week which included a quick trip to Dallas to find an apartment (spoiler I found one!!), and early birthday party, a graduation party for one of my college besties and then all day Sunday spent with family and more importantly mom!

-Lemon Bar smoothie to kick off the week. Recipe by one of my new favorite instagram follows @weeknightbite!
-DIY flavored La Croix with the help of fruity essential oils.
-An OG TAB recipe post. These thai cashew lettuce wraps are always a crowd please and so easy.
-Down and back trip to Dallas on Thursday to go apartment shopping. I found the cutest place in walking distance to this delicious salad.
-I’ve spend the past year and half volunteering and serving on the young professionals board for a local non-profit, Cleats For Kids. Overwhelmed by their amazing staff who gifted me this cake for my upcoming move. I’m so inspired by them and the work they do.
-When half of your best friends all have birthday’s in May, you throw yourselves a joint birthday party!
-Patio hangs with my new little koala bff Hallie!
-No better smell or taste than homemade bread. This batch was gifted, but excited to learn from my sweet friend Teri so I can take bread making to Dallas!
-Crispy smashed potatoes for Mother’s day alongside smoked brisket by dad and this salad.

May, my favorite month! May means April is over (a commonly busy/stressful month for me), summer is on the horizon, temperatures finally start acting like the time of year it is, and it's my birthday month!

Two very busy back to back weeks and weekends are over. They were fun and rewarding, but I'm glad to have those two stressful, busy, and tiring weeks behind me. Now I'm just looking forward to enjoying the summer-like temperatures, the relaxed vibe this time of year brings and especially looking forward to a bachelorette party in Austin this weekend for my Staysh girl and then some celebrating of my favorite momma for Mother's Day!

-New "Lite Bite" post! Thai Chicken Lettuce Boats. 
-On an avocado toast KICK! Current version is smashed avocado with Trader Joe's Everything But the Bagel seasoning on a piece of Dave's Killer Bread Cinnamon Raisin. The sweetness of the bread totally works and compliments the avocado. 
-All kinds of new dishes coming to The Jones Assembly menu. Somehow getting to taste, photograph and give my feedback on the dishes is included in my job title. Not sure how I got so lucky. On that note, I also just celebrated my 2 year anniversary with the best company around!
-Current protein shake crush: frozen pineapple, frozen cauliflower, ginger, avocado (for creaminess), vanilla protein powder and coconut water.
-5 o'clock at the oasis (name that show) aka mom and dad's backyard.
-Winning combo for weekend mornings. Arbonne detox tea and NEW gold gel eye masks. 
-Can't do wedding dance floors without these two. 
-#FiestaDeFranklin.
-Love getting to be this chick's aunt!

I apologize if you fell for my April Fool's joke yesterday, you weren't alone. However, I'm not sure I've ever pulled off an April Fool's joke more successfully. I was quite proud. I was also blown away by the amount of people who fell for my joke and messaged me saying how sad they would be if TAB really was ending. I've said it before, but you put all this content out and wonder if people even read it. So thank you, thank you for reading my posts, making my recipes and letting me know that you do so! 

Jokes aside, I leave for Hawaii in one week. Did I tell you all I'm going to Hawaii? I haven't been on a real vacation in I can't tell you how long. It's just me and two girl friends, very spontaneously jetting off to paradise for a week.  Did I also mention we booked this trip 3 weeks ago? Really embracing the "YOLO" motto for this trip. 

I also posted 4 times last week. I haven't done that since hmm maybe 2015. TAB was in full force last week. Scroll back through my feed to see said posts.

-So excited to add Caroline to my Arbonne team!
-That soft boiled runny egg spilling out is giving me all the feels.
-Welcome to the hood Stella Nova. I don't know how you make your almond milk latte so good, but you officially have me hooked on them. 
-Raspberry Lemon Protein Muffins were posted last week and you simple need to make them as soon as possible. 
-Carrot cake protein shake was equal parts festive and delicious. 
-Hello fresh, hello roomie taco dinner!
-When Claire love's espresso martinis, you surprise her with espresso martinis for her birthday.. 
-Creamy Vegan Lemon Bars, loved by all the non-vegan's I fed them too. 
-Successfully pulled off an April Fool's joke for the first time ever. 
-Double desserts and dessert fails are oddly becoming an Easter tradition. Carrot cake fail 2K12, double cheesecakes 2k14, pie crust mishap and two coconut cream pies this year. 
-Eggcellent first Easter for Elle!
-Love our Easter feast tradition at home we have continued that past few years opposed to brunching out to eat.

Dove head first into the new month with a week and weekend filled with too much fun. I'm pointing fingers at this being my birthday month as the reason why. So much delicious food, made and eaten, drinks with friends, new and old, gorgeous weather, long sunny days and and a major feeling of summer creeping in. 

-Used my archived Cauliflower Crust Pizza recipe to make this pizza pie last Monday. Turned out better than I remembered, a post update is in the works. 
-A healthy dinner followed but an unhealthy amount of vegan cookie dough...this stuff is amazing (found at Whole Foods).
-The Moscow Mule adventure I mentioned before, went full speed last week. We tried out three more places and IMO mine is still the best!
-I have a friend who has me hopping on the oil train. Swapping real lemons for lemon oil in my morning hot water.
-Have you made the basil vinaigrette I posted last week? If not you are mistaken. I topped my cauliflower crust pizza and salads with it. 
-Last week's recipe post looking prettier than ever. 
-The last key lime pie recipe you need, coming this week.
-Scenes from cinco. 
-Not embarrassed at all to admit I went to En Croute 3 times in 24 hours over the weekend. Our new-ish little neighborhood french bistro has me smitten. 
-When you get to be wedding dates with one of your besties!
-The best time of year!!!
-Turkey burger night round two with my favorite people (my parents).
