Bites of My Life

Popping in on a Wednesday for one last bite as an official OKC resident. I cross the border tomorrow to stake ground in Texas. But let’s recap a really great last week before I go.

-You may remember me mentioning my co-worker Ethan back during my stint at Topgolf. We hadn’t seen each other since we left that job three years ago, but we ran into each other at a stoplight, literally, which then proceeded to plans to get drinks before I moved. It was like things never changed when we got together!
-If you love ginger like I do, run to TJ’s for this lemon and ginger sparkling water.
-To celebrate Global Running Day, Chlo and I traded our normal path to run through the prettiest area of the city followed by a Whole Foods breakfast after.
-Exhibit A of Whole Foods breakfast. Somewhere on our run our conversation made a turn to yogurt. We satisfied the craving immediately with a non-dairy yogurt and fruit and granola from the breakfast bar.
-A work happy hour to celebrate my work-wife’s HR certification and a last toast before my move. PSA if you didn’t know, I’m keeping my job just working remote. ILY Social Order!
-My friends threw me the best going away party last Friday. We grilled out, there was a balloon garland, adorable cookies and a few too many rounds of flip cup that resulted in a few too many tears…
-Wedding #2 to celebrate our princess bride Em alongside my best friends from high school.
-Quick break from packing for this clean out the fridge meal: grapefruit, salami, pickles and mustard. I wish I could say this was weird and strange, but I often eat meals that look just as odd as this.
-Mom made this orzo and farro salad alongside this sheet pan meal for a last Sunday dinner and it was delicious night of and just as good for leftovers these past few nights. Would be amazing to take to a summer cookout.

p.s. Did you catch last week’s post on the Best Brandy Ice in OKC?

Forever grateful for you Oklahoma. I’ll be back soon (in a month 🙃)

Bites of My Life

Only a week and a half left of being a permanent Oklahoma resident. I’m cleaning out the fridge, training our new employee, selling all my unnecessary junk, packed half my house, celebrated turning 26 again, danced my booty off at good friend’s wedding, and trying to get every last minute with everyone I can’t live without before I cross the state line. This 😱emoji so accurate to many aspects of my life right now.

biters+303.jpg

-Clean out the fridge meals have commenced. I’m refusing to buy groceries except for some lettuce and a few apples until I move. This turkey burger salad situation wasn’t too weird, but I’m looking forward to seeing how I can combine frozen party meatballs and canned chickpeas into a meal…
-PSA I’m keeping my job (and got a promotion!!!), but still moving to Dallas. To make it all feasible, we hired a marketing coordinator to work with me and be my boots on the ground in OKC while I’m remote. Bailey started last week and she is already killing the game.
-Marie Kondo meets loosing 1,000 square feet of living space meets family members who equally want to lighten their load equals one big ole garage sale. And a successful one at that.
-A belated birthday dinner with family on Friday ended my favorite way. Brandy ices have my heart.
-Pink is our color and pink is our other color (if you know what I’m referring too, double points to you).
-Lady gang celebrating the Mlady’s!
-Up close of this incredible pancake from Sunday brunch here.
-OKC’s baby skyline always has a way of showing off.
-True life: I’m a lighter hoarder. Things i found out while moving. Anyone need a long neck lighter??

Bites of My Life

Wowza. Last week was mmm emotional? Exhausting? Amazing? Emotional because I decided I am moving. Exhausting because crying a lot is exhausting and realizing I have to find a job, find an apartment, and find someone to take my current job is stressful. Amazing because despite the emotion and the exhaustion, I felt liberated all week by my decision and the support around it. And because it was a truly great Easter weekend with friends and family in town.

-Funfetti Cake recipe on the blog last week! Perfect for any celebration!
-New favorite restaurant/coffee shop/place to work is now open! Stitch opened right down from my office and next door to The Jones two weeks ago and I’m going to soak up as much time there as I can!
-Gal Pal Book Club #2! We just finished Girl, Stop Apologizing. We all did not like it…I would still recommend Girl, Wash Your Face, but take a pass on GSA.
-Super easy and nutritious sheet pan week night meal made a “lite bite” appearance. Recipe here.
-Hi! I’m moving to Dallas in June! Deciding if I’m going to write a post on the why… If you are in OKC and looking for a creative job in hospitality marketing, apply here.
-The go-to when I have nothing to eat. Check out my recipe for healthy fried rice. This time I used cauliflower rice and kimchi!
-The whole Social Order crew in one place for our Vol. 4 shoot with The Scout Guide!
-Orange, was I glad I got to go the the first Thunder playoff game, because our future in the series is not looking so bright.
-Spent Saturday morning judging a cake baking competition with the dream team. All to benefit the local charity SixTwelve. A group I wish I would have gotten involved in sooner. If you are in OKC, check them out!
-Really hoping mom’s table setting genes rub off on me when it comes time to host holidays for family in the future. She kills it every time!
-Ready for sister’s little peep to join our girl squad! She is due in a week and a half!
-Aunt Chloe came through with Easter dessert this year! Kathleen and I usually always make dessert (sometimes two), but we loved passing this torch to Chlo if it meant Lemon Cloud Pie!

Bites of My Life

A pretty easy and fun week last week that led up to another weekend in Dallas. Started the weekend with #NationalMargaritaDay and a copious amount of tortilla chips (I have zero restraint). A beautiful day Saturday catching up with friends getting to meet our Lo’s baby girl. It’s wild being the age where your friends start having babies, but it’s incredibly fun too! Finished the weekend with the Oscars which in my opinion was one of the best in years. Having seen zero nominated movies, the show was entertaining and the pink moment was everything!

-My friends and I have officially started a book club and I can’t wait for our first meeting. We’ve been talking about it for forever, but finally committed to getting together monthly to discuss our chosen book. First up, the book of the moment, Educated. Anyone else in a book club?
-The makings of my one of my favorite Defined Dish meals!
-Fun morning with work getting to prep, cook and serve at the Oklahoma City Homeless Alliance!
-Samoa Popcorn. It’s a thing. Figure out how, here.
-No story behind this picture except that his corner of my room was just looking cozy and cute.
-When you work in hospitality marketing and national food holidays lead you to taking vibey drink pictures and mentioning margaritas about 100 times in one day.
-It’s a crazy thing I tell you when your friends start having babies, but loved getting to meet sweet little Grace this weekend.
-A baby weekend kind of weekend apparently. Stole my little bestie for some on one aunt Annie and Elle time on Sunday.
-And the Oscar goes to… Samoa Popcorn of course!

Oscar bite: Pink for the win at the Oscars! My favorites were Gemma Chan and Julia Roberts!

Bites of My Life

I’m not doing my best at delivery a “bite of my life” so far in 2019. 4 weeks in and only 2 posts to show for it. However despite the lack of posts, there is still plenty to share! The year started with me going through a major rut in my work and kind of in my personal life too. With a little perseverance and prayers and I’m really starting to feel the wind change! Things are looking up.

As far as work, instead taking some work load off my plate, I countered by adding on more. In the form of fun projects, clients (yup!!), grabbing coffee with those who inspire me and taking courses to continue to gain new ideas. As far as personal life goes, I turned to retail and travel therapy. Nothing like a couple new sweaters and a trip out of town that can’t pull you out of a slump!

bites 284.jpg

-Fun project/client #1 has to do with one of the coolest new spots in town.
-Exhibit A of taking a course to help me stay inspired and creative in my field.
-One of my retail therapy purchases includes this headband from H&M that I feel entirely too good in when I wear. It’s the little things people.
-A local beer crawl with all your besties is the perfect way to spend the cold/boring January weekends.
-Whole 30 Chicken Piccata from the Whole30 queen, The Defined Dish on tap for dinners last week. Note, I omitted the chicken stock in the recipe because I was meal prepping and didn’t care to have a sauce.
-Perks of traveling United early in the morning. I love these stroopwafel’s with coffee and tea!
-My travels led me back to the west coast for the second time in the past 3 months! The weekend had big intentions of being a surprise, but life happens and so does the stomach bug, and sometimes you have to tell the birthday boy his friends are showing up in 12 hours and ya got to rally!
-Newport Beach I love you.
-Cliche “best weekend with the best people” kind of feeling.
