Bites of My Life

I’m writing this the night before I head back to Dallas (finally) after 10 days up in Oklahoma. It’s been a looooong time coming, but my company’s newest concept Spark, opened yesterday. We’ve been working on this project since 2018 (zipes!!). After construction, covid, paper good delays, hiring shortages, and food sourcing Spark is finally open. It’s been a labor of love, but always so rewarding to open a new concept. While my trip was long it was productive and so fun. The work can get exhausting but I truly love my job!

-Got to Oklahoma City last week for a 10-day stint while here for work. Spark being the #1 reason!
-There is an F45 on every corner in Dallas yet I’ve never tried it. F45 landed in OKC and is still in its opening week. I ended up finding myself there 4 times during my trip. I’m hooked on this quick and effective workout!
-This little sparkie got to come try Spark during our soft opening. Hallie approved!
-I ate this burger bowl from Spark’s menu about every day while here.
-Veggie Chili by sis which is sneaky good. Topped with shredded gouda - the key!
-Oatmeal kiiiiick. Have had it every day for the last 10 days. Best when eaten from an almost empty almond butter jar.
-I wasn’t kidding when I said I kept eating this burger bowl. A side of pink fries for good measure.
-Mom and dad had planned a big family dinner Sunday night, which made for the perfect occasion for the Tucker family favorite Caramel Cake. Hoping to have this recipe posted tomorrow!
-Perfect ending to the weekend all around the table with family.

-Got to OKC for a week of work, but first some fall festival cuteness with my nieces.

Bites of My Life

I was in Oklahoma City for the second half of the week. It was a quick work filled trip, but great to see friends, fam, and co-workers. I turned right back around once Saturday hit to get back to Dallas. I gushed on it a little in my last bites post, but Dallas just feels really right lately. That being said, I’m hoping to be back in Oklahoma this coming weekend for the 4th, but fingers crossed their rain holds off so I can have a fun lake weekend, and not a wash out. Keep scrolling to the end of this post if you need some holiday recipe inspo!

-Easy and delicious summer dinner: TJ’s Chili Lime Chicken Burger topped with chunks of avocado and tomatoes, pickled red onion, mustard for dipping (always), and a quick pickled Asian cucumber salad.
-Pulled into OKC and quickly found myself taking sips of all the new coffees on The Jones’ summer menu rollout.
-Mom and dad’s new house is IT! My trip was fast and furious, but I can’t wait to be back in Oklahoma soon to spend an extended amount of time in that pool.
-Morning walk with these OKC besties!
-After dinner Homemade Brandy Ices !!
-Trips down I-35 deserve SNACKS! A mix of skinny pop, cheddar bunnies, and almonds did the trick.
-Back in Dallas, for a Bridgeton-themed birthday tea for the queen, Ellie!
-Bonded by espresso martinis and being Dallas transplants.
-End of an era as Royal Blue Grocery closes. So many coffee dates, afternoon work sessions, friend meetups, and bible studies on the patio. Going to miss it, but excited for what the RBG team has up their sleeve.

Work, wedding, work, wedding, repeat. <— This has been and is my schedule for the next few weeks. One wedding and two work trips down, three weddings to go. It’s exhausting being 27 sometimes let me tell you 🤪! Not pictured below: work and wedding…LOL.

Bites 400.png

-Monday morning ritual always means an errand to return my weekly Rent the Runway picks. If you aren’t renting clothes and aren’t following Confessions, I’m not sure what you’re doing.
-Shrimpy shrimpy! New recipe post went up last week.
-Favorite spot in Dallas. Could eat the kale salad or caesar at Alamo Club once a week. At this rate… I do!
-Now serving, Wednesday tennis! Been saying I’ve wanted to take tennis lessons for the past few years, and thrilled to finally be making it happen.
-TAB turned 8 last week. She’s getting so big!
-Haven’t had protein pancakes in a minute, but they always hit the spot. I have my recipe saved in IG highlights.
-Prolon reached out if I’d be interested in their 5-day fasting-mimicking diet. I’d heard of it before and did a lot of research before starting, but I said sure! I geek out on a challenge when it comes to food. I started Saturday and was ready to throw in the towel. It’s now Monday morning, day 3, and you can call me the Prolon queen.
-Quick stop by Margaritaville on Saturday.
-Sunday funday with my L-drink….

Bites of My Life

It was a short week in Dallas before heading up to Oklahoma City for the weekend. I was back for work and a wedding shower for a friend. I hadn’t been since the holidays and it was great to be back with my family and very best friends. It’s been a wild (in a good way) and dare I say “blessed” start to 2021 for the Tucker family, so getting to be with them and count our blessings was just what I needed.

-I first tried Blender Bombs back when they got their start a few years ago. They are little “bombs” full of superfoods and essential amino acids to power pack your smoothie. I’ve been bloated and uncomfortable (tmi?) the past few weeks, so I’m giving BBs a try again to see if I can nourish my body while also helping out my gut. I shall report back.
-Love Shack Fancy clothing is sometimes a bit too girly for me, but their Dallas store opened last week and it is simply the cutest thing ever. An instant mood booster when you walk in.
-Turning my mousey hair back to bright blonde. Lucky for me I won (yes actually won) one of those Instagram giveaways for a full set of free highlights by Nick at Charlie + Co. He did such a good job, I may be a convert from my box kit… the verdict is still out.
-Back in OKC means working from The Social Order office. It’s always good to be back at this place.
-We are opening our 8th Fuzzy’s location in less than a month. Got to walk through the newest location and it may be one of my favorites.
-When in… you know the drill.
-Giddy up gal pals. Had the best afternoon getting to shower cowgirl MaryKate (and Connor)!
-I didn’t go to OSU for many reasons, but after having Stillwater’s signature drink, a “Limey,” I’m not sure I would have made it out alive if I had gone. Don’t get me wrong they are delicious!! But after one small drink, my eyes were starting to cross!
