Bites of My Life

-My current lineup. Boom Town, Hey Ladies, and Bread & Wine (for the second time). I’m struggling to get through Boom Town and Hey Ladies so I added in one of my faves to help re-inspire my reading.
-This healthy little tostada stack was actually the victim of a clean out the fridge meal. Crisp 2 Siete tortillas in a little coconut oil. Top each with smashed black beans and some almond milk cheese. Stack the two tortillas and heat in the oven to melt the cheese. Top with tomato, chopped bell pepper, some lettuce, more cheese and salsa.
-After work walk with my best girl!
-One of my favorite events of the year is the chili cook-off that happens downtown OKC every year. Haggled The Jones Assembly into participating this year. We didn’t take a win, but getting to sample multiple chilis for lunch was worth it!
-Checked-in to the Avid and immediately checked out the snack selection. Props to Avid for the great snack options and complimentary chocolate bar.
-Fun little staycation Friday night. More on this coming later this week.
-French toast!
-A batch of Pumpkin Bread to kick off the holiday baking season.

Bites of My Life

Currently sitting on the floor of my living with a tissue stuffed in each nostril (TMI?) watching the new episode of KUWTK. Christmas cold you are not invited and can leave now. My head is in a fog so enough of this, keep scrolling for more interesting life happenings!

-Pressed stop instead of snooze on my alarm for sister's early morning Barre3 class, but woke up late/just early enough to make it to Beyond pilates as self redemption. #mondays.
-Cherry Vanilla Almond shake to kick off the week. Frozen cherries, vanilla Arbonne protein, almond extract, ice and almond milk. 
-6:00 AM flow to celebrate my favorite studio's 6th year! Congrats Soul!
-Verde Turkey Chili on repeat last week. Loved seeing so many others doing the same. (here's looking at you Lexie, Madeline, Whitney and sis).
-Golden Milk and not pictured, copious amounts of chocolate chips (my current dessert of choice) were Wednesday's "bite while I watched" during Riverdale. Did you see last week's post??
-Too close for comfort one-on-one time with #GabetheBabe this weekend. 
-Yolk porn atop a smashed avo on rice cake for Saturday brekkie. 
-New yoga find this weekend. Come flow with me at 405 Yoga, it's the real deal! 
-Made Rachael's Good Eats raw chocolate bark to have as a dessert option this week instead of my current chocolate chip obsession. 


Bites of My Life

Four blog posts in one week, who am I?? Gift guide, dinner recipe and cookie recipe all went live last week. Can you not agree that sometimes you get more done when you are busier? The rush of the holidays are real, but if that means being more active on the blog side so be it! Can't say four posts will get rolled out this week...

Feeling festive with all the Christmas decorations up, gift guide out, shopping (almost) done, cookies made etc! A festive weekend for the Sooners too, cheering on our team with my best friends in Dallas! 'Tis the season!

-The Jones Assembly decked their halls last week! Love having this festive place to work from.
-Apple nachos inspired by my insta girl crush @rachelsgoodeats.
-A few of my favorite things from my gift guide. Who else is a sucker for gift guides??
-Crock-Pot Pork Chops and Sweet Potatoes was a recipe my mom would often make growing up and I've loved fixing it recently for an easy but nostalgic dinner. I used these mini purple sweet potatoes from Trader Joe's and loved them! 
-Last week's cookie recipe doubled as an OU game day treat and a festive Christmas cookie! 
-Went in, went out for a quick dinner on the road and Taylor's first In-N-Out experience! 
-Mimosas, coffee, Baileys and a Chick-Fil-A breakfast spread to get the game day started!
-12 big cheers for a winning weekend and being with my favorite crew.
-Verde Turkey Chili made whole 30 // sans beans, topped with just avo and plantain chips.

A day late and a dollar short. Happy halloween and happy bites on a Tuesday!

-Halloween Candy Compost Cookie, the best way to swipe clean all the bowls of Halloween candy laying around. 
-Apparently biscuits are now a must when dining with Malory. Also seen here. Anyway, The Press opened in the Plaza District last week. Southwest comfort food and Fleetwood Mac on repeat #sold.
-Photoshoot for new brunch cocktails. Work is hard. 
-Lindsay's Healing Bowls were meal prepped for last week. They didn't quite heal me because of the nasty cold I caught last week, but still a huge fan. 
-Current snack obsession. Rice cake, almond butter, drizzle of maple syrup and sprinkle of Maldon salt. 
-Pumpkin bread, cause #NationalPumpkinDay. 
-Two Kardashians and two cats walked into a party...
-Have you heard about the Google Home Mini Donut Shop? It popped up in OKC this weekend and I walked away a winner! OK, google. 
-Best friends, in the living room, with the spoon. AKA Saturday involving a 2 rounds of Clue and 2 bowls of chili.


It's Getting Chili

Once the temperature drops I pretty much crave chili for every single meal. It's the ultimate cold weather, warm you up meal. Chili is easily one of my favorite foods. I've attended too many chili cook-offs to count, made several pots myself and eaten an unhealthy amount of Fritos all for the sake of an excellent bowl of chili.

I've rounded up a pretty stocked list of different kinds of chili. Turkey chili, white chicken chili, veggie chili, etc. I adore all kinds of chili, buuuuut if you ask me nothing beats my momma's. I know everyone says that, but I'll fight you on it that her's really is the best. It even won my high school chili contest back in the day. No beans, ground beef, lots of spices, and tons of Fritos. Scroll through for some pin worthy chili recipes, but keep scrolling for momma Tucker's chili recipe!

1) Quick Bison Chili

11) And now, the only chili recipe you need.

Mom's Chili

2 lbs. lean chili meat
1/2 lb. lean ground chuck
1 onion, chopped
1/4 cup green pepper, chopped
2 cloves of garlic, minced
1 heaping Tbsp. chili powder
1 heaping Tbsp. cumin
3/4heaping tsp. oregano
1/2 heaping tsp. sage
2 heaping Tbsp. cornmeal
1 to 2-1 oz. Williams chili seasoning
1 tsp. salt
1/4 tsp. black pepper
1 Tbsp. Worcestershire sauce
1/2 cup chili sauce
1-6 oz. tomato paste
1-1 lb. can whole, fire roasted tomatoes
Fritos, sour cream, cheese, green onion to garnish

Sauté ground meats, onion, green pepper and garlic in a large pot. Add remaining ingredients, combining well. Bring to a boil. Reduce heat and simmer, covered, for 2 hours. Add more seasoning if desired. It's all up to your taste buds. Garnish with lots of cheese and Fritos. I like to do a bottom layer of Fritos, then a big helping of chili then lots of cheese, sour cream, green onions and more Fritos!
