Bites of My Life

Back to school for some, back to the same for me. Adult life is slightly depressing this time of year without the excitement of back to school shopping, new teachers and the first day of school. But them I'm reminded that summer doesn't end so abruptly, I'm getting paid for how I spend my day instead of having to study and I love what I do, and let's be honest, I didn't love school. So all is still right in the world. 

Bites last week consisted of chili, a steak (YUM <--especially from this veggie loving gal), toast ;), salmon, breakfast foods, a grill out and ice cream! Non edible bites included finishing another book and starting a new one (follow me on goodreads!!), rain, and more rain and one last pool day of the season.

-It's been raining cats and dogs in Oklahoma (which I've been loooooving). It's giving us a taste of fall and cooler wedding, which quickly meant chili night in our house! P.S. top your chili with a dollop of guacamole instead of sour cream and thank me later. 
-Morning mirror selfie to show off my new Made By Maddie earrings. Loving this red and turquoise combo! 
-If you follow @themorningtoast on instagram, this was my picture they reposted. If you know you know, if you don't, don't worry. 
-Spent too much on this salmon. Baked it, made a mustard sauce, roasted asparagus, got real excited... only to be let down real quick. It tasted fishy and gross and now I probably won't eat salmon for at least 3 months. Let alone buy it. 
-Book 11 out of my 12 in a year goal! I'm crazy! PSA: this book will make some heads turn if you read in public. I had too many people comment on it while I was reading on the elliptical. All boys too on that note. Just beware you will have to explain yourself if caught in public reading Lauren Weisberger's new book aka the author of The Devil Wears Prada.
-This mix >>>> almonds, pistachios and dark chocolate covered espresso beans. Killer afternoon slump snack. 
-This muffin mix has been sitting in my pantry for too long. Woke up Saturday morning with an itch to bake and I was very pleased with how these Gluten Free Blueberry muffins from Brandless turned out. I'm also nostalgic to muffins from a box. That's how it was done when I was little, and sometimes food from a box just needs to happen.
-My first attempt at protein pancakes. Look amaze tasted ehhhh. I got some tips after sharing this photo on social media, so another go will be happening soon.
-A ice cream craving cured with the OG. Frozen yogurt twist on a cone from Braum's. My order since I was little.

Bites of My Life

I took a week off of instagram last week and it felt gooooood. Does anyone else ever do that? I made a mental resolution with myself to take 1 week off, every month for (hopefully) the rest of the year. It was such a mind clearer. Similar to a body detox where you rid your insides of toxins, this was a mind detox. For one week, the comparison game was over, the feeling of having/wanting to document my every moment was gone, the mindless hours spent staring at my phone were minimized. I challenge you to try a week off here and there. 

I logged off instagram last Monday through Saturday. I then sat in church Sunday morning to hear our pastor touch on the effects of social media. How it can lead to depression due to the over comparison, how it can lead to us losing sight of our values. How important it is to know God, know his stories, and walk with him, in order to keep our values in line. Especially in this ever changing world and comparison game we live in. #FoodForThought going into the new week! ...already looking forward to my next insta detox!

-Green salad on repeat again last week! Added a soft boiled egg for extra protein after an amazing lunch class at Union with Chelsea! My favorite way to break up the day. 
-Blueberry coconut cucumber protein shake is my fave right now! The combo may seem strange but it's weirdly refreshing. The recipe is on my instagram highlights!
-Posted these insane brownies last week. I'm just going to make you go read the post because like I said, they are insane. And borderline healthy! 
-Almond milk capp at TJA while grinding through some work. I love having a built in coffee shop right at my fingertips!
-Addicted to this breakfast. Protein, fiber and probiotics coming from soft scrambled eggs on GG crackers topped with kimchi!
-Dinner with my Stacey girl but really celebrating that Trin has moved back from Florida!
-Batch of steel cut oats for me and for Sarah Beth! SB texted me last week looking for some breakfast inspo. She loves oatmeal but has to be at work super early, so oatmeal is just microwaved from a packet (which honestly I love), but it's nice to indulge in thick and creamy homemade steel cut oats sometimes! I made a big batch of McCann's with cinnamon for her to re-heat at work! I suggest topping with more cinnamon, some blueberries and a spoonful of almond butter! If you need it sweeter add some brown sugar!
-I was trying to re-create these for sunday night dinner, but the frozen shrimp I pulled out of my freezer was more than questionable. Luckily I had some leftover shredded chicken aslo in the freezer so I adapted and ended up with a really delish dinner. 
-Did you read yesterday's post? I'm doing somethin' and celebratin' with healthy protein cake balls!

Healthy Funfetti Cake Balls + An Announcement

I hate cake balls, anyone else? Now you are probably like why the heck is this girl giving me a recipe for cake balls if she hates them? These Healthy Funfetti Cake Balls actually taste more like cookie dough to me, but when I think of funfetti I think of the box of Pillsbury Funfetti cake mix not cookies. So here we are with a cake ball instead of a cookie dough recipe.

But really, the moist, mushy inside of cake balls made from mixing cake and icing together just does not jive with me. Let's also all take a moment to cringe while we say the word, moist. OK, moving on.

Protein balls, you've seen them all over Pinterest and instagram, protein bites, energy balls, energy bites whatever you want to call them. I even have a few recipes found here and here. They are basically just a cop out on a real dessert, but also pretty genius to have stored in your fridge when you need something sweet or need a tiny bit of substance before a workout class or something of that nature. I love how this funfetti version came out because 1. i mean how cute? and 2. the ingredient list is short and if you are a borderline health food junky like myself, you most likely have these ingredients in your pantry. If you don't...come over to my house, I'll make you some!

Healthy Funfetti Cake Balls
yields 9-10 cake balls

Ingredients:
1 cup unsweetened shredded coconut
2 scoops Arbonne Vanilla Protein powder
6 pitted dates
3 Tbsp. Almond milk
2 tsp. Cashew butter (or any nut butter, I use Georgia Grinders)
1.5 Tbsp. Multi-colored sprinkles 

Directions:
Add coconut into a food processor and blend until it becomes tiny grounds of coconut.

Add everything else but the sprinkles, pulse until it becomes thick crumbs (dough is pretty dry, you can add more almond milk if needed). Pour into a bowl and stir in sprinkles. Using a cookie scoop, press and roll into golf ball size bites! Refrigerate for at least 1 hour before serving! Keep in an airtight container in the fridge! Good for 1-2 weeks.

Bites of My Life

One week 'till Christmas! I've really loved this Christmas season. It seems to me the older you get the more holiday parties and Christmas celebrations there are. I must mention that all the events can sometimes be exhausting, but I've really enjoyed all the reasons to be together with various groups of people who mean the most to me. This past week including various meals in bowls (LOL, but really see below), a concert, a catering(!!!), a floral arranging class, best friends Christmas party, a visit to see my sweet Gaga, a visit from cousins I haven't seen in forever, precious time with my Elle girl and playing Mrs. Claus delivering fresh baked cookies to my besties.

-Robert Earl Keen with my Fam-O-Lee made for my 4th time seeing REK, but this time at The Jones Assembly!
-While battling a nasty cold at the beginning of the week, I had a major craving for some healing oatmeal. I made a big batch of steel-cut oats and ate them various ways through the week. Seen here as a savory version served with a sunny-side up egg and avo for lunch. 
-Bowls, bowls, all type of bowls. I prefer to eat smoothies and protein shakes from a bowl.
-Oats appearing again with cinnamon apples!
-Peppermint Mocha Protein Shake, bowl style.
-Take A Bite caters! Loved getting ask to make the food for a friend's company Christmas party! 
-Donut dreams came true thanks to Holey Rollers
-What breakfast looks like most days. Shoveled in to my mouth with one hand while applying mascara with the other. 
-Dancer, Prancer, Comet, Cupid, Elle and Annie!
-Special day at Elle's baptism. 
-Perfect CCCs decked for Christmas made for the best edible gift for my besties.

Thanksgiving week is hereeeeee! Mentally and physically preparing myself for all of the "bites" that are about to happen this week. Thanksgiving is hands down the best holiday, who else agrees? Spending my Thanksgiving a leetle different this year do to my growing family, but as the baby of the fam I've gotten pretty good at adapting to traditions. Except when it comes to real vs. fake Christmas trees. I won't even get into it because I've already exhausted my parents on the situation and to my dismay lost the battle. Anyway, I'm eager to get to Thursday to spend the day around a full table and end the day with a full belly.

-Gingerbread protein shake on the go, but first a picture to prove it. P.S. mules are from Target, my best kept secret that now every single one of you know... 
-So if you haven't noticed I've been making protein shakes like crazy. Well my sweet friend Madison got me hooked on Arbonne's vanilla protein powder and I'm having so much fun coming up with creative shake recipes. I've always been on the lookout for a protein powder to add to my morning smoothies and this one is ittttttt! 
-Another day another shake. Peppermint mocha shake to be exact. 
-Showed up to bible study to see my cookie pizza there! Not made by me. SO COOL when people make your recipes, thanks Paige!
-Do yourself a favor and try the new maple rosemary matcha latte at The Jones. I can't get enough, and I loved getting to introduce Annie #2 to her first matcha with this one!
-Blogging tips and tricks workshop with a side of black coffee and pastries. 
-Behind the scenes of the most epic and easy holiday cheese board. One of my contributions to friendsgiving thanks to the help from Hickory Farms!
-When Friday goes from work, to a glass of wine, to a salmon board, to a basket of chips and salsa, to a margarita, to an early bedtime!
-If you know me, you know how happy this little drink makes me. 
-Making my food as festive as possible is a guilt pleasure of mine. Exhibit A. Pumpkin protein shake recipe here
-Perfect homemade pie crust was prepped yesterday and being stored in the freezer until it gets baked into pumpkin and pecan pie on Thursday. Recipe is here and here
-Loaves on loaves on loaves of pumpkin bread for our Jones Assembly staff Thanksgiving lunch today! P.S. pumpkin bread is the perfect t-giving breakfast w/ some AB spread on a slice and bananas layered on top. Perfect fuel for cooking all morning!
