Bites of My Life

My favorite part of early fall is when the afternoon stays warm, but the mornings and evenings are slightly chilly. Perfect early morning walking weather, preferably with a cup of coffee in hand. A walk a day keeps the doctor away!

Last week/weekend was spent snuggling with my niece, embracing football games and food ;), unapologetically getting my first pumpkin spice latte (almond milk + 1 pump PS), seeing Home Again (HIGHLY recommend) and then followed by a Miss America watch party.

-Officially Pumpkin Green Smoothie time! One of my favorite smoothie recipes ever. 
-A version of my go to "loaded salad." Apple, rotisserie chicken, roasted sweet potato, red onion, mix of lettuce and homemade balsamic dressing. 
-Still working on my spaghetti squash 4-ways post. This week was shrimp scampi spaghetti squash!
-One with the weights and a new personal record!
-Gabe and I still aren't besties but we are pretty good at taking pictures together!
-Mom and dad's equals unlimited homemade lattes with their Nespresso and my new favorite Milkadamia nut milk. 
-A Mexican spread for the OU vs. Ohio State game. Made a big batch of my Crock-Pot Carnitas with all the fixings and tons of chips and dips. 
-Sister Sunday at Midtown's Commonplace Books
-A throw whatever is in the fridge into a bowl kind of lunch. Results = leftover cold spaghetti squash, cherry tomatoes, roasted red pepper, parsley, red onion, capers and a drizzle of olive oil, salt and pepper!

Bites of My Life

Last week was minor compared to my weekend. After a flight rebook and a few delays, I made it to Miami to commence "Ta Ta Tucker" with Claire. Kathleen couldn't make it due to angel baby Elle only being 5 weeks old, but getting to spend time with oldest sis and her closest friends was more fun than I hoped. I haven't been to the beach in a hot minute. The trip was quick but I absolutely loved stuffing my face at 27 Restaurant & Bar, recovering with a latte the size of my face, napping in the sun piΓ±a colada the frozen mojito in hand, then some classic late night Miami clubbing. Miami you exceeded expectations! We are now just under 6 weeks until Claire's big day. The countdown is on as well as a sister act of "Whole 6 weeks" for the final push until the wedding.

-Worked on perfecting my mint chip smoothie all week. It came down to nut milk, spinach, frozen cauliflower, frozen banana, hemp powder, cacao powder, cacao nibs in and on top, and a drop of peppermint essential oils.
-Working on a "Spaghetti Squash 4 Ways" post...stay tuned. 
-Been embracing my calmer schedule and spending mornings working from home spending way too long staying in my PJs. 
-#tatatucker in South Beach with big sis bride!
-Take me to the beach and all I want is a piΓ±a colada! 
-Partied in the city where they heat was on.
-"The Workout" smoothie at Uptown Grocery. I can't get enough!

-Aunt Annie makes for a great napping spot.

Bites of My Life

We are having the most amazing, un-typical August weather here in OKC. Tons of rain has brought cooler temps but no one is complaining. Nothing crazy it's still in the 80s, but the mornings and evenings are gorgeous and the afternoons made for perfect impromptu back to back pool days this weekend. Despite September on the horizon, I'm holding on to summer. Lots of watermelon consumed, pool time, bike rides and meals eaten outside.

-Recipe post for Lemon Turmeric Energy Bites for the perfect pre or post workout treat...
-...or paired with an apple and almond butter for breakfast.
-Meal prepped all the ingredients to have cobb salads for dinner. Hard boiled egg, roasted sweet potato, avocado, red onion, cherry tomatoes, and bacon! Drizzled with red wine vinegar, salt and pepper!
-Crushing on chia pudding recently. Working on perfecting my recipe before posting it. 
-The most random lunch combination consisting of some of my favorite things. Plantain chips and salsa, pickled okra and watermelon.
-Lunch, snack, drink and reading material all picked up at one of my favorite grocery stores.
-Free beer, free food and free hats and we are suddenly the biggest OKC Dodgers fans.
-A piece of D.C. landed in my mailbox this week! TY TY RJ!
-My girl just being her normal cute, now one month old self!
-Homemade watermelon moscow mules. Just added Whole Foods watermelon juice and chunks of watermelon to my standard mule recipe.
-Post pool day cobb salad. I'm having a cobb salad moment.
-Early morning lattes outside in the most amazing August weather.

I haven't "gone back to school" in a couple years now, but hearing about schools starting and having a teacher as a roommate, I have a sense of the school year creeping in and can feel my routine starting to fall back into place. Summer has been c-r-a-z-y and I don't expect much less this fall, but the idea of a routine amongst the crazy sounds pretty nice.

-Easy tuna nicoise salad for dinners last week. Canned tuna, soft boiled egg, olives, green beans, cherry tomatoes and salty capers!
-Annie through the years while cleaning out old boxes and organizers. I found a slew of old business cards from my high school entrepreneur adventure to my summer gig in D.C.
-Friday started off slow and easy with this at home smoothie bowl. 
-Friday ended a little more wild being transported via party bus.
-Beer, nachos, fried chicken and okra. Solid Oklahoma night at our state's oldest bar. 
-Shnugs and snugs with Claire now that she if back from NYC.
-From living with Matty girl when she first met Steve to then seeing them get married is something rare and so cool. Funnest night celebrating the Behms.  
-StudioHop recently launched in Tulsa and I'm so excited to have Katie repping SH up north. Catch us both at their Tulsa Launch Party this Saturday at Lululemon on Brookside!
-The Matcha Flotcha Flame from Wheeze the Juice is my version of matcha heaven. Just matcha, coconut milk and cinnamon. 
-A rainy weekend, fallish temps and having someone around who geeks out over pumpkin seeds, resulted to these Double Chocolate Pumpkin Seed Cookies along with Perfect CCCs being baked up yesterday.
-A healthy twist on Shrimp and Grits coming soon!

The whole fam damily was reunited this past weekend to celebrate Elle finally joining the party and oldest sis getting married! In Tucker fashion our weekend consisted of lot's of eating, with the addition of a family Cyclebar session and lot's of squeals and stares at the new kid in town (Elle). I love having the whole crew together! Before we are Brooklyn Bound for C & M's big day, a stop in Miami is on the horizon for a little bachelorette fiesta!

-Decided to go vegan, Monday through Friday morning. Why? For the pure reason to see if I could. Results. I ate so many carbs in replace for meat and dairy.  Will I do it again, probably not. Why until just Friday morning? Because like I said above, I knew our weekend would consist of some delicious eats I wasn't going to miss out on. 
-My oldest friend with my newest friend :) A special Monday indeed. 
-Had been on the hunt for the perfect modern but still vintage looking oriental rug. With the help of Libby's post, I scored this rug for my bedroom. Full room shot to come. 
-The strawberry almond milk from Wheeze 1. is delicious 2. is the prettiest shade of pink and 3. I'll by any healthy food that comes in the prettiest shade of pink.
-Exhibit A of all the carbs while going vegan. Will I go vegan again, no. Will I make this pasta again? 100% yes. Recipe can found here
-The best mornings are when I get a work out in early enough to still have time to enjoy a walk before work. Caffeine and company make it even better!

-If you haven't had the salmon ceviche at Barrios you are wasting your time. Whole 30 approved and the best dish eva.

-Today is sister's bday, but we celebrated yesterday while the whole fam was still in town with these waffles.
