Bites of My Life

Last week was a run of the mill week with some highlights like game night (any Rummikub fans out there?), a visit from my London living college bestie, and then a Saturday spent at a lake nearby with some of my favorite Dallas friends! We came back from the lake Sunday morning and I hopped in the car to drive up to OKC to surprise my dad for Father’s Day and his birthday today!

-Perfecting my chia seed pudding recipe one breakfast at a time!
-After having a similar wrap from a Dallas favorite for lunch Sunday, I went to the store and proceeded to recreate it every day for lunch. There is something so satisfying about the taste of sandwich ingredients but without the gluten!
-3pm hits and the GG crackers go into the oven for my daily snack. I’ve been doing a few GG pizzas and one GG with AB and raspberries for dessert. If you are like what the heck are GGs and what are you talking about, read this.
-Grass-fed beef, broccoli, mushrooms, and Asian seasonings made up this stir-fry on a whim!
-My little Londoner was in town (Fort Worth), so a visit was in order. Catching up with Megan and her family is always the best. Lots of white wine and girl talk.
-By Friday, my lettuce wrap ingredients were on the outs, so I used some leftover small lettuce leaves to fill with salami, cashew cheese, mustard, pickles and microgreens. Odd but it worked.
-Cheeseboard lakeside!
-Snuck out of Dallas for the day, for tons of sun, food, and rounds of Code Names!
-When you forget Prosecco, add tequila to your Aperol and call it a Lakeside Spritz.

Bites of My Life

I love the cold, but the summer. Oh, the summer. You kill me. You are too good. My energy level skyrockets this time of year. I want to do all the things in the summer as opposed to winter where I could hibernate for 3 straight months and be happy as a clam. 

I want to eat all the summer food, go on a walk EVERY evening, be more social during the week, spend as much time outside as I can, clean out my closet, deep clean my room, be extra active, and maximize my workday so I have more free time in the morning and evenings. Summer motivation is in full swing!

-I don't have marble countertops. Here is proof-ha! Just a contact paper covered foam board!
-Y'ALL! I posted something besides just a bites post. Catch my mayo-less tuna salad recipe here. Word on the street is that you will be getting a second recipe post tomorrow too!
-Post-bootcamp recovery shake before the rest of my breakfast. I've been waking up at the crack of dawn (4:30AM) to train with Align Performance. Bootcamp is from 5:30-6:30, so when I get home I do an Arbonne recovery shake (1 scoop protein, water, cinnamon and ice in a shaker bottle) then follow it with scrambled eggs later in the morning. If I ate a full breakfast at 6:30 I'd want lunch by 10AM. P.S. if you are local and interested in bootcamp, join me, your first class is free!
-Morning coffee/work date with my Lindz before she leaves me for LA. I can't talk about it anymore otherwise I'll get tears on my keyboard.
-Leftover watermelon tomato salad topped with grilled chicken. Is there a better summer dinner?
-Back to Cali Al goes, but first dinner with the whole crew!
-When in Stillwater, OK, must eat at Red Rock Bakery and Deli. Or so I'm told...and so I now agree. SO GOOD!
-Smashed avo on 2 GG crackers. Who else loves GG crackers? Who doesn't know what I'm talking about? Read here to get the gist and then order on Amazon ASAP.
-When curly fries are an option, you always go curly. Despite the fact the fact that I was poolside in a bikini while eating them...
-You all know I love my Super Coffee, but here is just another photo to remind you. And just so you know the maple hazelnut flavor is everything.
-Treasures from the Asian supermarket include ginger chews, gochujang, mini boxes of fruity gum and an excuse to show off my new shoes ;)
-Father's day feast was full-fledged Korean BBQ themed and I think we nailed it!

Bites of My Life

Double the bites post, double the apologies for sucking at blogging lately. I had all intentions of posting last week, but life happens and then you get a cold, that turns into a sinus infection, that turns into a week of wanting to do anything to feel better, and do nothing that has to do with blogging. 

But today you are getting a bite of my life. A double dip kind of bite (even better in my opinion). Getting this post together and live is partially driven by my yoga friend, Victoria. Hi Victoria!

Despite my lack of getting anything out there, but a measly bites of my life post, Victoria mentioned to me in our yoga class last week that she doesn't mind that I've only been posting BOML lately. She said she loves the weekly snapshots! I'll be honest. If I were a reader I would probably never read my BOML. I pretty much only write them for me. For an online journal of my life, so I can look back and see what I did each week over these past few years. (Which I do. I love to go back and read old BOML)! But to hear other people actually read these kind of post too, well, I guess I better be better about actually getting them out there! So thank you Victoria for being the fuel behind my lack of energy to post these days. 

6/5-6/11

-After outfitting our team at the restaurant in Hedley & Bennett, I've been coveting my own H&B, but now I'm a proud owner of my owner and member of the #apronsquad!
-Lavender Acai smoothie. Still perfecting the recipe but a goodie for sure!
-Say hello to my new mint chocolate chip bestie!! I've wanted a cruiser for about the past 6 years and now she is all mine!
-CharCUTErie!
-#froseallday coming soon to The Jones Assembly.
-Holding on for dear life while we biked and bar hopped!
-Bridesmaids assemble! Pre-wedding festivities have commenced for Madeline + Zach!
-My favorite way to start the day. Avocado omelette @ En Croute!
-Showing off what I've been doing the past months to mom and dad last Sunday!

6/12-6/18

-Kicking off sick week summer 2k17 with a bowl of veggies and goods to try to kick my immune system back into gear! Not pictured the copious amounts of Emergen-C, Cold-Ease, Ibuprofen, Zyrtec and antibiotics. 
-When you buy a waterproof disposable camera for Memorial Weekend and you finally get the prints back! I felt like I was in 2003. Never know whatcha gonna get!
-Like I said before, my favorite way to start the day! 
-Treat yourself Wednesday! Highly recommend Amanda's Aesthetics for a facial if you're local!
-The basic bitch salad @ The Jones. Yup, we went there. 
-Loved getting to show my friends where I've been hiding the past few months. 
-FIG SEASON is here!!
-My favorite kind of lunch.

Bites of My Life

I'm writing this as I drift off into a NyQuil induced slumber, so please ignore any run-ons or grammar errors. A little cold decided to come hang out with me this week, it was uninvited. It's time it leave the party because I want to be on my A-game for a very anticipated trip this coming weekend. I am headed back to D.C!!!! A full D.C. Diary post to be expected next week recapping the week.

-Snuck half the batch of these turkey meatballs I made a few weeks back in the freezer. I love having them to pull out for an unexpected satisfying dinner.
-Pulled out this recipe from the TAB archives. I'm working on remaking old recipes to give them some 2016 life!
-Last weeks work was fueled by Elemental Coffee's chai tea latte. 
-Have you tried the new siggi's seasonal flavor? Strawberry basil!!
-My OKC guide is revamped and up to do date.
-Lunch with mom typically means at least one of us is ordering a taco salad. We both pulled the plug this time. 
-Breakfast with dad on Saturday morning like the old days! We used to get up real early on Saturdays and go try different spots, just the two of us while the rest of the family was still sleeping.
-If I'm not going to drink my calories on the weekend, I fully plan on indulging, by eating them instead.
-Father's Day pie was a huge success. The crust, the filling, the flavor; an all around win!
