Bites of My Life

Last week was the first week in a long time I didn't have much school work. It was nice to have free time to hang out and get some things done I kept having to put to the side. One thing being blogging, it felt good getting back on a pretty regular schedule of posting. This week is very busy, but I'm making a promise with myself to post everyday. 
This week will be busy, but there is so much fun stuff going on I can't complain. There are more birthdays to celebrate (I swear everyone was born in the month of October), pumpkins to be carved and halloween parties to attend. All have to be done so I can prepare for my trip to New York next week. More on that later. 
Now for a recap of last week...
I would apologize for my overload of food pictures week after week, but food kind of takes over my life so I don't have any excuses. 

-I surprisingly made these inside out chocolate chip cookies last Monday. I say surprising because the kitchen and ingredients I had to work with were very limited. I used this recipe, but made some serious adjustments. They somehow turned out being so good!
-I got a manicure from a 6 year old last week. She was more about the rainbow look instead of picking one color.
-These bright blue corn tortilla migas with avocado cream sauce were my Sunday brunch order. It was a birthday brunch for one of my favorite people!
-"Family Dinner" round 2 happened last night. We had been planning since last week. Queso, tomato salad, my mom's chili and chocolate chip cookie dough ice cream left me in a food coma for the rest of the night. I'd share the chili recipe, but I'm not one to share secret family recipes.

Kings of Leon's Mechanical Bull...I just can't, it's too good.
I'm on a s'mores kick after our cookout Sunday night. These s'mores put regular ones to shame, so I have to try them.
Tory Burch recently launched a home decor line. Her mildly inappropriate needlepoint pillows are cracking me up.
7 ways to use hummus. (my shameless plug for hummus and Eat Well Embrace Life). Recently, I've been using my hummus as a replacement for salad dressing.
I LOVE halloween costumes. Cute and funny, not slutty and generic. I'm dying over little kid costumes like this one, this one, and these. Now I'm making a mental note to dress my kids in them one day.
p.s. This Everygirl post on "9 Reasons to Boycott Slutty Costumes This Halloween" is so true.

Good Morning

I love mornings. I love mornings because it means the start of a new day, free of anything bad that may have happened the day before. I love mornings because I am most productive when the sun is out. When I wake up early I get the most done. I love mornings because it gives me time to myself. Most people don't like the morning as much as I do, so they sleep right through it. I hate sleeping through the morning because that means missing my most favorite part of the day. Breakfast. Breakfast is the best part of mornings and my favorite kind of food.

If you know me well you know how much I love the morning. On a good morning when I have extra time before class or anything else, my routine usually consists of waking up, making a cup of coffee, making breakfast, blogging or reading blogs, some time with the big man upstairs, and if I really have time, I try to squeeze in a little Kathy Lee and Hoda.

Shake It Up

My creativity and inspiration when it comes to my blog have been pretty non-existitant recently. I am struggling to come up with new posts that I think will be interesting to readers and myself. 
I need to shake things up a bit and get my creative juices flowing again. I turned to Pinterest, tumblrs, and other blogs to try and spur my inspiration. Here's to hoping this helps...

Bites of My Life

Last week officially felt like fall. It was so chilly everyday, but I loved it! I love this time of year! I listened to christmas music the majority of the time I was studying for my test, and even watched Elf last week.
After getting through a test, I had a little rest time to celebrate good friends birthdays, eat lots of chili, and watch some of my best friends get initiated into my sorority! Here's a little recap of my week.
-Two of my best friends and I serving up our sorority's chili in a chili cook-off. We didn't win, but we ran out in about 30 minutes, so I think that's a good sign.
-I think it's known that I am a cheese lover. Especially a fancy cheese lover. My friends and I have all been about the "cheese" cakes to celebrate with instead of birthday cakes. 
-I had the pleasure of hanging out with these 85 girls as their New Member Chair over the past 9 weeks. They are no longer new members, but now official members! I couldn't be more excited for them!
-A group of friends and I ended the weekend right last night with a little cookout! The boys provided the burgers and I made this yummy corn, avocado and tomato salad to accompany them, recipe here. We then sat around the fire while I proceeded to eat way too many roasted marshmallow.
