Bites of My Life

I can't believe it is June. May was really great month, now let's hope June lives up to it. After a birthday celebration with my family (that was somewhat of a fail; not my family, but the food), I was busy at my internship and continually staying safe from more storms that moved in this week. This past week was kind of birthday week. Between mine, my grandmother's, and today being Sarah Beth's, the celebrations just keep going!
This weekend was incredible. A bunch of out of town friends were here and staying with us. I think at one point there were 10 girls staying at our little loft. We had a great weekend catching up, having a 
b-day celebration for Sarah Beth, and just laying around having girl time! After having an apartment full of people all weekend it is feeling pretty lonely around here.

-new beaded hair ties, that can be found on my wrist more than my hair
-my beautiful grandmother on her 80th birthday
-6 a.m. barre3. dedication.
-put a monogram on it and I'll love it
-delicious warm olive appetizer at my birthday dinner. the one good part of the meal.

What I'm Listening To

I can't get enough of this song right now. Not exaggerating when I probably listened to it 15 times today. I told you guys I have a problem with overplaying songs. The song actually came out a year ago, but is just now getting popular in the US. Emeli, pronounced Emily, knows what I like when it comes to music. "Next to Me," is that perfect turn up really loud and belt every word when you're in your car by yourself speeding down the highway kind of song.

Spinach and Feta Salad with Blackberry Dressing

This salad was a complete accident and it could not have turned out more delicious. I am a huge fan of summer salads using fresh veggies or fruit, so that was inspiration for this spinach salad.

This is another dish I concocted with all things I had in the fridge, kind of like my pasta salad from last week. The salad consisted of spinach leaves, feta cheese, strawberries, blueberries, green onions and avocado. I then tossed it with the best homemade blackberry dressing. This salad would be great as a side, with brunch, or as a meal if you added some protein like chicken or nuts in it!

Spinach and Feta Salad with Blackberry Dressing
serves 2-3 as a small salad

Salad:
2 big handfuls of spinach
handful of strawberries, sliced
handful of blueberries
4 green onions, chopped
1/2 avocado sliced
sprinkle of feta (or a big handful if you are a feta fanatic like myself)

Dressing:
1/2 pint of blackberries
handful of fresh basil
juice of a lemon

Directions:
Puree the ingredients for the dressing in a blender then toss with salad ingredients.

There will most likely be leftover dressing, but no need to let it go to waste. Feel free to eat it plain by the spoonful. There will be no judgement from me.
