Thai Chicken Lettuce Boats
3 ribs of romain lettuce
1 cup shredded chicken (cook chicken breasts in a crock-pot or use a rotisserie chicken)
2 tsp. coconut oil
1 clove garlic, minced
1 tsp. fresh ginger, finely chopped or grated
sambal oelek chili sauce
soy sauce or liquid aminos
sliced green onion
In a small sauté pan over medium-low heat, melt your coconut oil. Add your garlic and fresh ginger and cook in the oil for about 30 seconds. Add the shredded chicken, chopped cashews a spoonful of chili sauce and some soy sauce or liquid aminos. Stir around in the pan to combine the flavors and reheat the chicken. Divide the chicken amongst the three ribs of lettuce. Top with more cashews, chopped cilantro, sliced green onions and sesame seeds.
