Texas Sheet Cake Cookies

One of my dearest friends looked over our house while we were in Charleston. I wanted to leave her some goodies and have an excuse to use my mixer.  The whole giving up sweets thing for lent has been very difficult. Not being able to eat the dough or lick the bow or frosting? Thank goodness mom was around to sample as I went. 

These cookies are based on the traditional chocolate sheet cake, but transformed into cookies. Texas Sheet cake is a staple recipe in my house. Next time I'd want to try to use our cake recipe and adapt them, but I followed this recipe instead. In my opinion I think I should rename them to Oklahoma Frosted Drop Cookies. Seems more appropriate bing the Oklahoma girl that I am. Texas tries to own everything!

Texas Sheet Cake Cookies
yields 24 cookies


1/2 cup butter, softened
1/3 cup sugar
1 egg
1 tsp. vanilla
1 tsp. baking powder
1/2 tsp. salt
1 1/3 cup flour
1/2  cup semi-sweet chocolate chips, melted

1/2 cup butter
2 Tbsp. cocoa powder
3 Tbsp. milk
2 tsp. vanilla (I added this because every recipe could use more vanilla)
2 1/2 cups powdered sugar

Preheat oven to 350 degrees. Line a baking sheet with parchment paper. In the bowl of a stand mixer beat butter and sugar together until light and fluffy. Add egg and vanilla and mixed until combined. Mix in baking soda and salt. Turn mixer to low and slowly add flour. The dough will be thick and look like sugar cookie dough. 

In a microwave safe bowl, melt chocolate chips in 30 second intervals until melted. I did 30 second, stirred, then only needed 15 more seconds. Mix the melted chocolate into the dough. Scoop tablespoon sized cookies onto baking sheets. Bake for 7-8 minutes, but don't over bake. 

While your cookies are cooling, melt butter, cocoa powder, milk and vanilla in a sauce pan over medium heat. Whisk in powdered sugar until all the lumps are gone and the icing is thin. Use a tablespoon to pour the warm icing  over the cookies. Using a wire rack would make more since, but I let the cookies just sit in puddles of icing.

Just look at that frosting flooding over the cookies. 

If it weren't for lent, all those chocolate scraps would be in my tummy. Whether you call them Texas Sheet Cake Cookies or Oklahoma Frosted Drop Cookies;) I hope you try them out!
